Slow Cooker French Onion Soup Recipe

Let me just start by saying: if you like French Onion Soup, you'vegot to try this Slow Cooker French Onion Soup . . .yummm!

My husband has a favorite restaurant in Colorado Springs that makes some plain-old-fantastic French Onion Soup, and he even agreed that this was almost as good as theirs. If you love french onion soup, you do not want to miss trying this recipe.

🍴 Menu Plan Note: This yummy French Onion Soup recipe can be found in the Slow Cooker Meal Plan: Week 5!

How to make French onion soup from scratch?

The very best onions to use when making French onion soup from scratch are those big, sweet and meaty Vidalia onions. If those aren't in season then large yellow onions are great also.

Slice onions about 1/4-inch thick and sauté in some butter until they are nice and golden in color (being careful not to cook too fast). As you begin cooking the onions, they will eventually take on a beautiful caramelized coloring as they release their sugars.

Next, add some beef broth and seasonings (you can do as simple as salt and pepper) and simmer on low 4-6 hours.

Finally, the best part! Ladle the French onion soup into oven-safe soup bowls. Top each bowl with a slice or two of bread and a good amount of Swiss cheese (to make the cheesy toast on top).

Pop under the broiler for a couple of minutes and be prepared for a dance to occur on your taste buds!

Be sure to let it broil long enough to get those crusty cheese pieces on the side of your bowl. Those are the best, ha! 😍

How to caramelize onions in the slow cooker?

You can caramelize onions on the stove topor in theslow cooker and both are equally delicious!

But, if you want to skip the step of cooking them on the stove top, we recommend a slow cooker with a stovetop cooking option like this one. Just cook directly in the slow cooker like you would a skillet on your stove top. These all in one slow cookers are truly the best. 🙂

Plus, only 1 pan to clean 🙂

The key to wonderful caramelized sweet onions is low and slow. Just add some heat, real butter and lots of time and patience (which is a bit hard for this always..in..a..hurry..momma)!

How do I thicken French onion soup?

Every onion soup needs a thickener so you don't end up with watery onion soup. For this recipe, we use a bit of flour and a packet of Au Jus seasoning mix. It makes for a perfect combination and the Au Jus adds a depth of flavor to the broth that is just divine.

What goes with French onion soup?

Even though there is bread right in the soup, hmmmm, I love to serve even more bread when I make it. You can use the rest of the French bread loaf or bake up a batch of my favorite homemade bread. Of course, I serve salad with just about everything so a nice full salad would be a perfect addition.

Of course you can serve this Slow Cooker French Onion Soup as an appetizer. If you decide to go that way, here are a few recipes I think this would be a perfect starter for.

  • Grilled Flat Iron Steak with Gourmet Butter
  • Grandma's Beef Brisket
  • Low Country Boil on the Grill
  • Slow Cooker Brown Sugar Pork Tenderloin with Balsamic Glaze

While serving this meatless meal will help you pinch a few extra pennies at the grocery store, I promise you'll be plentystuffed when you finish this one . . . that cheesy gooeyness couldn't be one bit better.

FAQs

How do you deepen the flavor of French onion soup? ›

A few sprigs of thyme and a bay leaf elevate the soup even more, but I take it a step further, adding a splash of fish sauce for complexity and depth—don't worry, it won't taste fishy—and a hit of cider vinegar to balance some of that oniony sweetness.

Should you cook onions before putting in slow cooker? ›

It can be nice to cook the onions beforehand, as the flavour is different to when you put them in raw, but experiment both ways as you may find you prefer one. It can also be good to brown meat to give it some colour, but again, this is not essential.

What is the difference between onion soup and French onion soup? ›

What is the Difference Between Onion Soup and French Onion Soup? French onion soup is always made with beef stock. Other onion soups can be made with chicken, vegetable, or beef stock. Additionally, French onion soup typically contains wine or sherry, which isn't typical or necessary in other onion soups.

Does soup taste better in slow cooker? ›

That's because the low, slow style of cooking lets the flavors simmer together for hours, creating a much richer and more flavorful meal.

Why do you put baking soda in French onion soup? ›

The caramelized onions for this soup cook more quickly due to a pinch of baking soda but still have that deep, slow-cooked flavor. Topping the soup with hot, cheesy toasts prepared while the soup simmers, eliminates the need to bake the soup in specialty French onion soup bowls.

Should you caramelize onions for French onion soup? ›

The key to good French onion soup is to cook the onions so long that they threaten to melt into a viscous, dark brown paste, à la Marmite. As has already been extensively reported in Slate, there are no shortcuts when you're caramelizing onions; it always takes at least an hour, usually longer.

Is 4 hours on high the same as 8 hours on low in a slow cooker? ›

The difference between "High" and "Low" on slow cookers seems to differ with every brand and model. One thing that is consistent, though, is that food takes seven to eight hours to reach a simmer point (around 210°) on low; versus three to four hours on high.

Why did my onions turn blue in slow cooker? ›

If you cook red onion with alkaline foods, such as nuts, lentils, and some vegetables, those anthocyanins revert to their blue hue. The same is true of red cabbage. To maintain the red hue, add a little acid, such as a splash of vinegar or a squeeze of lemon juice.

Can you overcook onions in slow cooker? ›

It's almost impossible to overcook these onions, but I've found that 10 hours makes soft, lightly browned onions that still have a bit of bite.

What broth is French onion soup made of? ›

This soup traditionally is made with beef stock, though sometimes a good beef stock can be hard to come by and expensive to make. If you use boxed stock, taste it first! If you don't like the taste, don't use it. (If you cook a lot of beef or beef roasts, save the scraps and freeze them to make a stock with later.)

Why is French onion soup so good? ›

French onion soup is the ultimate comfort food. Onions get slowly cooked until sweet and caramelized, then simmered in rich broth until they're practically falling apart. To finish it off, toasted bread is added to give it that lovable crisp-gone-soggy texture and a generous amount of Gruyère cheese is melted on top.

Can you overcook soup in a slow cooker? ›

Editor's Tip: Can you overcook soup in a slow cooker? It's a common question—and the short answer is yes. Ingredients like veggies, pasta and rice can get very mushy if left in the slow cooker too long. Many meats will toughen, too.

Is it OK to leave soup in a crockpot overnight? ›

Most appliances will automatically shut off after 20 or so hours on this setting, but you shouldn't leave food in a slow cooker for an extended length of time. The general rule of thumb is that 2-4 hours is the maximum length of time you can leave food in a slow cooker on warm.

How long can you leave soup in crockpot on low? ›

That varies by what's inside the slow cooker and also by the appliance's setting and model, the experts say. Most recipes for all-day cooking call for 6 to 8 hours on low. Quality- (and safety-) wise, another 1 to 2 hours in 'keep warm' mode won't mess things up.

How do you doctor up canned French onion soup? ›

Infusing the soup with a richer taste is as easy as quickly sauteing crushed garlic before pouring the soup in. Some soft, buttery garlic sauteed in earthy olive oil is the perfect addition to enrich canned French onion soup.

How do you make soup taste stronger? ›

Use fresh vegetables, high-quality meats or broth, and fresh herbs to add depth of flavor. Add acidity: A squeeze of lemon or lime juice, a dash of vinegar, or a splash of wine can brighten the flavors of a soup and make it taste more complex.

What spices add depth to soup? ›

Herbs and sources add flavor, aroma, and intensity to the soup broth. You can pick fresh or dried herbs like basil for tomato-based soups or fresh parsley for clear broths. You may also add more spices like turmeric, ground ginger, ground paprika, or nutmeg for a touch of spice and color to your soup broth.
